Oven Baked Chimichangas

- 2 Tbsp olive oil
- ½ cup chopped onion
- 2 cloves minced garlic
- 2 cups salsa
- 3 Tbsp water
- ¼ cup chili powder
- ½ tsp ground cumin
- ½ tsp ground cinnamon
- 1 pound cooked, shredded chicken
- refried beans
- cheese
- flour tortillas
- Combine olive oil, onion and garlic and saute until tender.
- Add salsa and water, mix together
- Add chili powder, cumin and cinnamon, mix together
- Add chicken and combine, simmer until heated through
- Layer tortilla with refried beans, cheese and chicken mixture
- Brush with olive oil
- Bake 5 minutes at 425 degrees, flip and brush with olive oil and bake another 5 minutes, repeat 3 times and sprinkle cheese on top
