Soup season has arrived! Do you need to add a few recipes to your soup collection? I know I do and a few of the requirements for my soup recipe collection is that they have to easy and quick to make.

I have fallen in love with this Tomato Tortellini Soup because of the simpleness, but yet the flavor is fabulous.

Here’s how easy it is.  Simple grab a large stock pot and toss in all the ingredients in the recipe except for the tortellini and optional items. Stir and bring to a boil. Once boiling, turn the burner down to medium-low and add in the frozen tortellini. Cook for 10 more minutes and serve!

That’s it!  You can add whatever topping you like. We love to add in more grated Parmesan cheese, bacon crumbles and especially croutons.

Tomato Tortellini Soup

  • 1 package frozen cheese tortellini
  • 2 cans condensed tomato soup, undiluted
  • 2 cups vegetable broth
  • 2 cups milk
  • 2 cups half-and-half cream
  • 1/2 cup chopped oil-packed sun-dried tomatoes
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1 cup grated or shredded Parmesan cheese
  • optional: Additional shredded Parmesan cheese
  • optional: crumbled bacon
  • optional: crutons
  1. In stock pot, combine all ingredients except tortellini and optional ingredients.
  2. Bring to a boil, then turn down to medium-low.
  3. Add frozen tortellini and cook 10 more minutes.
  4. Serve and top with shredded Parmesan, bacon and croutons.
