Summer is the PERFECT time to enjoy easy food on the grill, so we are starting a 4 weeks series on some of our favorites.   (Be sure to check back every Wednesday in June.)  My family loves pizza and during the summer months we like to throw ours on the grill for a smoky flavor.  It’s easy and a fun twist on the traditional “barbecue”!

This is more of a technique and you’ll be able to customize it specifically for your family, but here’s the basics on grilled pizza.

Ingredients:  pizza dough or pre-made crust, sauce, mozzarella cheese, choice of toppings.

Start by rolling out the dough and baking it on a cookie sheet for about 5-8 minutes at 350 degrees.  You don’t want it brown but you want it to be almost done.  If you have a pre-made crust you can skip this step.

Continue making it like you would any other pizza by adding the sauce, cheese and toppings.  For summer we like to add fruit for a little bit of sweetness.

Tip:  If your family likes pepperoni, I suggest getting it cut thin in the deli.  I also lay mine on a paper towel and microwave them for about 20 seconds to crisp them a little before assembling the pizza.  (It also reduces the grease.)

 While you are assembling the pizza, turn the grill on high for a few minutes to get the grates really hot.  Clean the grates well, then turn the temperature down to low/medium.  You don’t want the grill too hot when you put the pizza on or it will burn the bottom quickly.

Put the pizza on the grill and close the lid.  Let it cook for a few minutes then check the bottom.  You might have to move it around a little if the grill cooks unevenly.

Once the cheese has melted, it’s ready to eat!  It normally takes around 10 minutes.  A large baking sheet makes it easy to get on and off the grill.
