Citrus Morning Muffins


Oh how I love breakfast!! After all, isn’t it the most important meal of the day?!? School mornings are a little crazy at our house and breakfast is, most mornings, just a bowl of cereal.  Every now and then I will make something special and these muffins are always a hit! (Actually my husband raves about them more than the kids.)

Ingredients
  • 1¾ cups all-purpose flour
  • ⅔ cup sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, melted
  • 1 cup sour cream
  • 1 egg
  • ¼ cup orange juice
  • 8 drops of Citrus Fresh Essential Oil or zest 1 orange
  • 1½ cups powdered sugar
  • ¼ cup orange juice
  • 4 drops of Citrus Fresh Essential Oil or 2 tsp. of orange zest
Instructions
  1. Preheat oven to 400 degrees.
  2. In a large bowl, mix flour, sugar, baking powder and salt.
  3. In another bowl, whisk together butter, sour cream, egg, orange juice and oil or zest. Pour mixture over dry ingredients and stir just until the mixture is moist.
  4. Evenly distribute the batter into a greased muffin tray. Bake for 14-16 minutes.
  5. To make the glaze, combine powder sugar, orange juice and orange oil or zest. Whisk until smooth. If the glaze is too thin, add more confectioners’ sugar as needed.
  6. Let the muffins cool for about 10 minutes and then dip the top into the glaze.
  7. Allow the glaze to set before serving.
