Oh how I love breakfast!! After all, isn’t it the most important meal of the day?!? School mornings are a little crazy at our house and breakfast is, most mornings, just a bowl of cereal. Every now and then I will make something special and these muffins are always a hit! (Actually my husband raves about them more than the kids.)

Ingredients
- 1¾ cups all-purpose flour
- ⅔ cup sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- ½ cup unsalted butter, melted
- 1 cup sour cream
- 1 egg
- ¼ cup orange juice
- 8 drops of Citrus Fresh Essential Oil or zest 1 orange
- 1½ cups powdered sugar
- ¼ cup orange juice
- 4 drops of Citrus Fresh Essential Oil or 2 tsp. of orange zest
Instructions
- Preheat oven to 400 degrees.
- In a large bowl, mix flour, sugar, baking powder and salt.
- In another bowl, whisk together butter, sour cream, egg, orange juice and oil or zest. Pour mixture over dry ingredients and stir just until the mixture is moist.
- Evenly distribute the batter into a greased muffin tray. Bake for 14-16 minutes.
- To make the glaze, combine powder sugar, orange juice and orange oil or zest. Whisk until smooth. If the glaze is too thin, add more confectioners’ sugar as needed.
- Let the muffins cool for about 10 minutes and then dip the top into the glaze.
- Allow the glaze to set before serving.
