Qdoba Salad Copycat


I absolutely LOVE Qdoba!  Do you have a restaurant close to where you live?  Their food is so fresh and I don’t ever feel guilty eating “fast food” when we go there.  My husband always teases that he can order for me at just about any restaurant…AND the thing I order every.single.time we go to Qdoba is their salad…it’s delicious!!

We like to add chicken to our salads, but you can use any type of meat or even make it vegetarian.

I dice a few chicken breasts up and brown them in a skillet on the stove, then I add one of the two seasonings you see below.  They are both really good and add a lot of flavor to the meat.

This meal is great to set up as a Taco Bar.  Normally, I just set out all the ingredients and let everyone add what they want.

It’s best to start with Romaine lettuce on the bottom.  Then I like to layer…bean and corn salsa, chicken, cheese, pico de gallo, sour cream and guacamole.

This is a great make ahead meal.  The salsa is good in the fridge for a few days and the chicken is even good cold!

Qdoba Salad Copycat (Bean & Corn Salsa)

Ingredients
  • 1 can of sweet corn
  • 1 can of black beans
  • 1 can of tomatoes with chilis
  • small red onion
Instructions
  1. Open all the cans and drain any juice. I also wash the beans.
  2. Dice the red onion.
  3. Combine all the ingredients and chili in the fridge before serving.
