Roasted Brussels Sprouts

There was a time in my life when I wouldn’t have touched a Brussels sprout…BUT, I had never had them roasted!!  So if you are thinking you don’t like Brussels Sprouts, maybe it’s time to give them a second chance.  I am a pretty picky eater, so if I like them, then they MUST be good. 😉

The great thing about this side dish is that it’s quick to make.  You can add roasted Brussels sprouts to pretty much any meal or even eat it as an appetizer.

Ingredients:  Brussels sprouts (I like to get the pre-chopped bags for connivence), olive oil, salt and pepper.

Chop up the Brussels sprouts, if they aren’t already. In a 9×13 pan spread out the sprouts in a pretty thin layer. (Like the picture above.)

Drizzle olive oil and sprinkle salt and pepper over the top, then toss to make sure all the Brussels sprouts are coated.  I prefer to use sea salt and fresh ground pepper, but you can use whatever you have on hand.

Put them under the broiler for 5-6 minutes.  When you you see some darker edges, stir them and place them back in for another couple of minutes.  The burned parts are the best!
