Slow Cooker Chipotle Roast


There’s nothing better than a warm meal stewing in the crockpot on a cold day.  The smells fill the house and, to make things even better, dinner can be ready without a ton of energy.  One of our family favorites is chipotle and Dr. Pepper roast.  I found the original recipe in my Pioneer Woman cookbook and modified it a tad to make it even easier!

Slow Cooker Chipotle Roast Recipe

Ingredients:  your choice of beef cut (I try to find one that is pretty marbled), 2 cans of Dr. Pepper or Coke, large onion, 1 can (11 Ounce) Chipotle Peppers In Adobo Sauce, 2 Tbs. of brown sugar, salt and pepper

Peel and chop the onion into large slices.  Then place the onion in the slow cooker.

Generously salt and pepper the roast, then set it on top of the onions.

Pour the can of chipotle peppers over the roast (include the sauce) and both cans of Dr Pepper. Add brown sugar to the juice and stir in.

Cook on low all day.  The longer you slow cook it the more tender it will be.  A general rule of thumb is about 8 hours.  Serve it with your favorite sides!!
