This chili has won many awards. My father is a chef and attended the Culinary Institute of America many years ago when it was in New Haven, CT. This is his recipe…almost. He also adds 1 Tbsp red pepper flakes, but it makes it too spicy for my kids. But if you like a bit more kick, add away. My whole family loves this hearty meal. My father has won many chili contests with this recipe and I have won the one and only contest I entered. The ketchup gives this chili a rich flavor! We usually add sour cream and cheese on top!

Camp Chili

Ingredients
- 1 lb ground beef
- 1 lb onion, diced
- 1½ Tbsp chili powder
- 1 Tbsp black pepper
- 1 Tbsp seasoned salt
- 1 Tbsp garlic salt
- 1 15 oz can dark red kidney beans
- 1 28 oz can diced tomatoes
- 1 14 oz bottle ketchup
- 1 14 oz bottle water
- 1 lg green pepper, diced
Instructions
- Brown ground beef, onion, and spices until cooked through
- Add the kidney beans, tomatoes, ketchup and water
- Bring to a boil
- Turn to simmer and add green pepper
- Simmer one hour
