This is a great dessert that is easy for your family or guests to enjoy! It honestly took more time for me to make these than for my children to devour them. I didn’t have a chance to taste one! The kids really loved them! I made another batch and those we gone as quickly as the first! We love to go strawberry picking in the spring and I will make a version of this with all of those little sweet strawberries! I will be sure to make a video of that creation!

Strawberry Cheesecake Bites

Ingredients
- 1 (8 oz) package cream cheese
- ½ cup confectioners’ sugar
- 2 tsp vanilla extract
- 12 large fresh strawberries, hulled
- 2 Tbsp graham cracker crumbs
- 2 (1 oz) squares semisweet chocolate chips
Instructions
- Line a baking sheet with waxed paper
- Beat together the cream cheese, confectioners sugar and vanilla extract in a bowl until smooth
- Spoon the mixture into a plastic bag and clip the corner with scissors
- Hollow out the strawberries
- Pipe the cream cheese filling into each strawberry
- Dip in melted chocolate and graham crackers if desired
