My children all love coconut shrimp and if it is on the menu at a restaurant, you can be sure someone at our table has ordered it for dinner! I went on a mission to find a recipe that I could make at home. One of my sons can’t seem to get enough of coconut shrimp and this recipe he loves. And believe me, he has tried it everywhere! Everyone really enjoyed this dish. We dip ours in orange marmalade and it’s the perfect combination! Enjoy!

Coconut Shrimp

Ingredients
- 1 egg
- ½ cup flour
- ⅔ cup beer
- 1½ tsp baking powder
- ¼ cup all-purpose flour
- 2 cups flaked coconut
- shrimp
- oil for deep frying
Instructions
- In a medium bowl, combine egg, ½ cup flour, beer and baking powder. Place ½ cup of flour and coconut in two separate bowls.
- Hold shrimp by the tail and dredge in flour, shaking off excess flour. Dip in egg/beer batter; allow excess to drip off. Roll shrimp in coconut
- Fry shrimp in batches and place on paper towel to drain.
- Serve
