An Easy & Cheesy Protein-Packed Breakfast – On the Go!
This is recipe is sure to hit the spot for the entire family. They are an entire breakfast wrapped into one handheld portion. These kolaches can be prepped at the beginning of the week and last up to 3 days in your fridge – reheat for 45 seconds in the microwave or even enjoy them cold.
If you want to have more filling, we suggest buying the large biscuits with 8 servings.

Ingredients to Make Sausage and Egg Kolaches
- 5 eggs
- ½ lb breakfast sausage
- 1 can of large (8 qty) or regular (10 qty) biscuits
- Optional: 1 cup medium cheddar, shredded
Kitchenware
- Bowl to whisk eggs in
- Large skillet/frying pan
- Cookie sheet/baking sheet
- Parchment paper
- Spatula
- Flour
- Rolling pin (can use a clean wine or olive oil bottle if you do not have one!)

Step by Step Instructions (With Pictures)
Step 1: Preheat Oven
Set oven temperature to 375 degrees and make sure the rack is in the middle of the oven.
Step 2: Cook Breakfast Sausage
Cook the breakfast sausage in a large skillet. If you purchased individual sausage links, you will want to squeeze the sausage mixture out of the link before you cook it. Discard the empty link casing when finished.
Step 3: Drain Grease
Once sausage is browned, drain grease from skillet.
Step 4: Add Eggs to Sausage and Scramble
Whisk your eggs in a separate bowl and pour them over the cooked sausage.
Scramble the mixture in the skillet until the eggs aren’t runny (1-2 minutes).
Step 5: Flatten Each Biscuit
Lightly dust flour over the surface you are rolling out the biscuits on. Dust the rolling pin (or a cleaned wine bottle/olive oil bottle etc) with flour and toss a little on the biscuits to prevent them from sticking.
Step 6: Add Mixture to Biscuits
Place a pinch of cheese and a couple of spoonfuls of your sausage and egg mixture to the middle of your biscuit. Wrap the longest sides toward the middle of your mixture and fold the ends up and over.
Place seam-side down on an ungreased cookie sheet or parchment paper.
Step 7: Bake!
Bake for 13-15 minutes, rotating your pan halfway through until the tops are golden brown.
